People often think Fried Rice to be a heavy food as normally the half cooked rice is fried in white oil in the process of making.But here am going to share today a method which needs less oil but tastes almost the same.
Ingredients (Serving Two)
- One cup Basmati rice.
- Half cup sweet pea.
- One carrot (julienned).
- Raisin (5 gm.).
- Cashew-nut (10 gm.).
- Olive oil (two table spoons)
- Bay leaf (two)
- Cinnamon (one inch crushed)
- Cardamom ( 2-3 pods crushed)
- Clove ( 2-3)
- Star anise (1)
- Water (two cups)
- Salt (to taste)
- Sugar (1 tea spoon )
DIRECTION:- Wash rice and dry it.
- Wash carrot julienne,sweet pea and raisin.
- Put the pressure cooker on the oven .
- Add two teaspoon full of olive oil or any white oil in it .
- Fry the cashew nuts till it is golden brown and put them aside.
- Add bay leaf , cardamom , clove , star anise , cinnamon one by one .
- Light fry sweet peas and carrot julienne .
- Add rice to it .
- Saute for five minutes till it sounds pat-pat and changes colour.
- Add salt and sugar to taste.
- Add water .
- Add raisins and the fried cashew nuts .
- Close the lid of the pressure cooker and wait till it is almost on the verge of making a whistle.
- Switch off the nob of the pressure cooker and give fifteen minutes standing time.Serve it hot with any curry and fry.
- Enjoy.
