LIGHT FRIED RICE ( COOKED IN PRESSURE-COOKER)

People often think Fried Rice to be a heavy food as normally the half cooked rice is fried in white oil in the process of making.But here am going to share today a method which needs less oil but tastes almost the same.

Ingredients (Serving Two)


  1. One cup Basmati rice.
  2. Half cup sweet pea.
  3. One carrot (julienned).
  4. Raisin (5 gm.).
  5. Cashew-nut (10 gm.).
  6. Olive oil (two table spoons)
  7. Bay leaf (two)
  8. Cinnamon (one inch crushed)
  9. Cardamom ( 2-3 pods crushed)
  10. Clove ( 2-3)
  11. Star anise (1)
  12. Water (two cups)
  13. Salt (to taste) 
  14. Sugar (1 tea spoon )


    DIRECTION:
    1. Wash rice and dry it.
    2. Wash carrot julienne,sweet pea and raisin.
    3. Put the pressure cooker on the oven .
    4. Add two teaspoon full of olive oil or any white oil in it .
    5. Fry the cashew nuts till it is golden brown and put them aside.
    6. Add bay leaf , cardamom , clove , star anise , cinnamon one by one .
    7. Light fry sweet peas and carrot julienne .
    8. Add rice to it . 
    9. Saute for five minutes till it sounds pat-pat and changes colour.
    10. Add salt and sugar to taste.
    11. Add water .
    12. Add raisins and the fried cashew nuts .
    13. Close the lid of the pressure cooker  and wait till it is almost on the verge of making a whistle.
    14. Switch off the nob of the pressure cooker  and give fifteen minutes standing time.Serve it hot with any curry and fry.
    15. Enjoy.
